It's been hot for a while here around the shop, so the weather yesterday seemed down right cool with a high in the 80's. Wife wanted something different for supper, and asked for potato soup. I've never made potato soup, ever. But, a few google looks here and there and we had a home made soup that was easy and good. Enjoy!
Take 1/2 pound bacon, diced, and cook in 6 quart cast iron pot
Remove bacon and put on paper towels to drain
Add 1 cup chopped onion, and 1 stalk celery to bacon drippings, cook until almost clear
Add 5-6 potatoes cubed into 1", and 2 cups sliced carrots. Cover with chicken broth.
Boil until potatoes and carrots are done, but firm
Stir together 4tbs of flour and 1 cup water
Add water/flour to pot stirring completely
Add 1/2 pint whipping cream
Bring mixture back to boil and then turn to simmer for 5 minutes.
I poured it into large Bolillo roles as bowls.
